Banana Blueberry Oat Muffins

With it turning cool, I've been turning to oatmeal and other warm breakfasts.  These Banana Blueberry Oat Muffins are easy to throw together.  They're filling without being too sweet.

 

Banana Blueberry Oat Muffins

Makes 12 muffins
Prep Time: 5 minutes

Ingredients:

1 cup + 2 tablespoons (separated) unbleached all purpose flour
1 cup old fashion oats
¼ cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 egg
2 tablespoons applesauce
1 tablespoon butter
¾ cup milk
½ teaspoon vanilla extract
¾ cup mashed bananas
1 cup frozen blueberries

Directions:

  1. Preheat oven to 350
  2. Use a fork or whisk to mix together the cup of flour and the oats, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, lightly beat the egg, and the applesauce, oil, milk, and vanilla.
  4. Mash 2 medium bananas and add them to the wet mixture
  5. Add the wet mixture to the dry and hand mix until just combined
  6. Toss the frozen blueberries in the remaining 2 tablespoons of flour and add them to the batter.
  7. Fill a greased or lined muffin tin ¾ of the way and bake at 350 for 20-25 minutes.
