Peanut Butter Frosting


Not to brag, but I make a mean chocolate peanut butter cake.  It's chocolate cake with a chocolate buttercream frosting and a fluffy peanut butter frosting in the middle.  The peanut butter frosting is what makes the cake.  It's light and fluffy but substantial enough to hold up the top layer of the cake.



I used this super quick frosting as a middle layer in my chocolate peanut butter cake and then mixed the remaining with some chocolate butter cream for the swirls of frosting below, but this can easily be doubled to ice a whole cake or a batch of chocolate cupcakes.



Peanut Butter Frosting

Makes approximately 1 cup
Prep Time: 5 minutes

Ingredients:

1/4 cup peanut butter
2 tablespoons butter
2 1/2 cups confectioner's sugar
1 teaspoon vanilla extract
3 tablespoons milk

Directions:

  1. Cream together the butter, peanut butter, and vanilla extract until well mixed. 
  2. Add the sugar one cup at a time, alternating with the milk. 
  3. Whip on high speed 3-5 minutes until light and fluffy.
